Hello, we’re Polly’s. Established in 2018 as a two-man operation brewing once every eleven days on a rickety brewkit out of a converted stable but with a huge passion for the hop-forward, fresh, modern beers we fell in love with during our formative drinking years.
We have grown rapidly from those humble beginnings to where we find ourselves today – in a brewery twelve times the size of our original brew space, capable of brewing up to ten times a week, looking after the livelihoods of fifteen incredibly talented team members.
Comfortably the highest rated brewery in Wales, and amongst the most well-regarded in the UK as a whole, we’ve since brought the good word of Polly’s to all four corners of the UK, and expanded our reach to almost thirty countries across the globe.
Mission
Our formative years at Polly’s were characterised by an infamous “brew once and never again” policy, largely due to the limitations of our then brew kit. We’re now all about solidifying our status in 2025 amongst our peers, drinkers and fans by revisiting the beers they yearn for us to rebrew to apply all the techniques we’ve learned and continue to learn in our short existence.
